Make Your Own Pasta

This week I made the most delicious pasta.  It all began after I saw Martha Stewart do it on her Cooking School show, and of course, watching Martha do it made my husband and I want to do it too!  The only problem was we didn’t have a pasta machine or 00 flour required to make it.  So off to Williams Sonoma we went and got this pasta machine and a box of 00 flour.  You can also get the pasta machine on Amazon if you don’t need it immediately.

The ingredients we used for making pasta are: 2 1/2 cups of 00 flour, 1 Tbsp olive oil, dash of salt, and 4 eggs. I followed the instructions from this recipe.  Its very simple.

When rolling out the pasta for ravioli, I suggest beginning at the number 4 slot, and then running it through at the number 2 slot, and then the number 1 slot for best results.

While we prepared the ravioli filling, I hung the sheets of pasta on a clothes drying rack.

I used a large freezer bag with a small hole cut in the corner to fill the ravioli because I don’t have a pastry bag.  Also, if the pasta starts to dry out, use a small spray bottle to moisten the pasta sheets.  It will significantly help with the process!

You can leave the raviolis flat like I have above, or you can get fancy and make cappelletti by folding the ravioli diagonally, and then meeting the two corners together.

If you cook these right away, the cooking time is significantly less than boxed pasta.  Be sure to add them to boiling water one at a time, and when they rise to the top of the pot, they should be cooked. Remove them one by one with a slotted spoon. Buon appetito!
