I left work yesterday with a dark cloud above me, following me home. No literally- my phone sounded an alarm for a flash flood warning (scared the crap out of me!) as the sky just darkened over to a misty gray. I got home in the midst of lighting and thunder right before the sky ripped open and just sobbed all over the area. I had planned on doing a nice DIY project outside to post for today, but the weather had other plans. What other choice did I have left but to bake? I decided to venture on making hazelnut cream scones.
Brandon ordered a box of 4 bags of hazelnut meal/flour online from Bob’s Red Mill, and it has been sitting in our pantry for over a month. We bought it to try and make our own soy-free dairy-free version of Nutella, but it’s one of the many things we just haven’t gotten around to yet. There is however, a really delicious recipe on the back of the bag for hazelnut cream scones that required just the right amount of time and effort.
Recipe on the bag:
1 cup of hazelnut meal
1 cup of all purpose flour
2 tsp sugar
1/2 tsp salt
1 Tbs baking powder
1 cup of heavy cream chilled
1/2 cup currants
I adapted the recipe a bit by replacing heavy cream with coconut milk, (therefore making this recipe vegan) changing the sugar quantity to a 1/4 cup, and using dried cranberries instead of currants. Last night I combined the dry ingredients together, measured out the coconut milk and set it aside in the fridge. When I woke up this morning I folded in the coconut milk, and rolled out the dough between 2 sheets of wax paper. Then I cut them to size and baked for approximately 12 minutes at 425 degrees.
This was the perfect treat to eat for breakfast as the sun was rising over the cool breeze of the soggy morning leftover from last night’s storm. I loved having the door cracked open as I sipped my coffee and savored my scone. It is something everyone should experience!
