Recently I have made some major dietary changes. Without getting into the details today, I will begin by saying I have completely transformed my eating habits by following the Paleo lifestyle. Although it was very difficult at first, eating the Paleo way has proved to really change my life for the better. I have to admit, I do miss a lot of the comfort foods I used to eat on a daily basis (cereal, bagels, ice cream) but the benefits have far outweighed the occasional longing I sometimes have for a sandwich. Over the past few months I’ve learned to make healthier Paleo options to replace the foods I once ate all the time, and this recipe is one of them. These are easily my new favorite cookies.
I adapted this recipe slightly by adding a teaspoon of xanthum gum, and used chocolate chips by Enjoy Life. (You can probably find the chips at your local big box market.) Oh, and if you are using pink salt like I did in my recipes, I would cut the measurement in half because it is so potent!! I learned that the hard way when I first made these. These cookies are soooo easy to make, they taste really good, and on more than one occasion I may or may not have had them for breakfast. Oh, and since I currently do not have an oven, when I bake these (at our former host’s house) I usually double the batch, and put the majority of them in the freezer so they last as long as possible.
