This is recipe number four in my slow attempt to complete the Real Simple Easy, Delicious Home Cooking cookbook. I like this recipe because it’s made from ingredients that are in a typical pantry. I made this in the middle of the week and from start to finish the entire dinner was ready in about an hour.
The ingredients needed for this recipe are 1 1/4 cup buttermilk (I used almond milk instead, and it turned out great) 1/2 teaspoon of paprika, about 2 1/2 pounds of chicken (I used boneless thighs) 1 cup of crushed Ritz crackers, 1/4 cup mayo or miracle whip, 1 tablespoon cider vinegar, 3/4 pound of broccoli or 2 small-medium bunches, 1 large carrot shredded, and 2 scallions. (The recipe in the Real Simple cookbook called for a shallot but I didn’t have it on hand. If you don’t have either, you can use a small onion finely shopped.
After preheating the oven to 375 degrees, the first thing I did was crush 1 sleeve of the Ritz crackers using a mortar. When they all were completely crushed I added some Adobe seasoning to the crumbs and stirred them together.
Next, I took the almond milk and paprika and whisked them together in a separate dish. When they were all mixed together, I added the chicken to the milk/paprika mix and completely submerged all the chicken.
Then I took one piece of chicken at a time and rolled it in the Ritz cracker crumbs, making sure both sides of the chicken were completely covered, and set them each on a wire cooling rack on top of a cookie sheet. I baked them for about 25-30 minutes, but you might need to cook yours more or less depending on the type of chicken you use. Halfway between the cooking time, use tongs to flip them over to the other side.
While the chicken is baking, it is the perfect opportunity to make the broccoli slaw. First take the mayo or miracle whip and vinegar and mix together in a bowl. Then cut your broccoli into bite size crowns.
Use a grater to shred the carrot completely and add to the broccoli. Then chop your shallot or scallion and add to the broccoli and carrot. Mix them all together.
There you have a delicious and easy meal. The broccoli slaw was my favorite part- I think this would be such a great side dish to bring to a summer pot luck or picnic. What do you think?
