Nothing says Summer is almost here like a delicious dessert that you can topple whipped cream over or make à la mode. My husband really enjoys peach cobbler, and to celebrate an occupational victory for him, I made his favorite dessert- and it’s gluten free! I Google searched the recipe and thought this one would suffice. Instead of using white flour, I substituted equal parts rice flour, tapioca flour and potato starch and also added a teaspoon of xanthum gum as a binding agent.
By the way… Please don’t make the same mistake I did! A half cup of butter is only one stick of butter- I used two sticks! As I was pouring the batter over the melted butter in the pan I was thinking to myself: “Gee, this looks like a lot of butter, but that’s what the recipe called for.” I feel so dumb, and my arteries are not happy with me.
Despite the fact I used twice as much butter than the recipe called for, I did however cut the sugar in half. Oh well. You win some, you lose some. Either way, it was delicious.
